Healthy Chocolate Chip Cookies

These cookies are amazing and great treat for Valentines Day !! I’ve made them for a lot of people over the years and everyone loves them!
Ingredients:
- 1/3 cup ghee (or butter)
- 1/2 cup organic unrefined sugar
- 1/4 cup organic sucanat
- 1 medium apple
- 1 tsp Vanilla extract
- 1 1/2 cup unbleached organic wheat flour or half and half rice and barley flour or spelt flour
- 1/2 cup walnuts (shelled and chopped)
- 1 cup organic chocolate chips (made with pure rather than hydrogenated coco or coconut butter – check label!)
- 1/2 tsp Salt
- 1/2 tsp baking soda
Directions:
- Puree the apple, sugar, sucanat, ghee, vanilla extract and salt in a food processor
- Shell and chop the walnuts
- measure chocolate chips
- measure flour, pour into a large bowl and mix thoroughly with the baking soda
- add chocolate chips and walnuts into the flour
- add the puree into the flour and mix quickly with broad strokes
- Preheat oven to 300F
- Drop by tablespoonfuls onto a non-stick cookie sheet. Improve the shapes with a spoon if necessary. Keep space around since cookies will expand
- Bake for 15 minutes or until bottom is slightly brown
