Healthy Chocolate Chip Cookies

These cookies are amazing and great treat for Valentines Day !! I’ve made them for a lot of people over the years and everyone loves them!

Ingredients:

  • 1/3 cup ghee (or butter)
  • 1/2 cup organic unrefined sugar
  • 1/4 cup organic sucanat
  • 1 medium apple
  • 1 tsp Vanilla extract
  • 1 1/2 cup unbleached organic wheat flour or half and half rice and barley flour or spelt flour
  • 1/2 cup walnuts (shelled and chopped)
  • 1 cup organic chocolate chips (made with pure rather than hydrogenated coco or coconut butter – check label!)
  • 1/2 tsp Salt
  • 1/2 tsp baking soda

Directions:

  1. Puree the apple, sugar, sucanat, ghee, vanilla extract and salt in a food processor
  2. Shell and chop the walnuts
  3. measure chocolate chips
  4. measure flour, pour into a large bowl and mix thoroughly with the baking soda
  5. add chocolate chips and walnuts into the flour
  6. add the puree into the flour and mix quickly with broad strokes
  7. Preheat oven to 300F
  8. Drop by tablespoonfuls onto a non-stick cookie sheet. Improve the shapes with a spoon if necessary. Keep space around since cookies will expand
  9. Bake for 15 minutes or until bottom is slightly brown
