Spaghetti with Tomato and Herb Salsa
This uncooked pasta sauce is fresh and vibrant tasting. Preparation time: 1/2 hour
Ingredients:
- 25ml olive oil
- 1 clove garlic, pressed
- 1/2 tsp. mineral salt
- 1/2 tsp pepper
- 2 Tbsp. apple cider vinegar
- 1/2 ml cayenne powder
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh basil
- 1/4 cup chopped fresh chives
- 4 medium tomatoes (fresh, vine-ripened tomatoes are nice)
- 1 lb/500g Kamut spaghetti (half a package)
- Tofu (crumbled, add to sauce)
Directions:
- In a large serving bowl, combine olive oil with garlic, salt, pepper, vinegar, parsley, basil, chives and cayenne.
- Gently toss in tomatoes. Allow to marinate until ready to serve.
- Just before serving, cook spaghetti in large pot of boiling (salted) water until tender, 8 to 10 minutes (or according to the-instructions on the package).
- Drain well; toss with tomato mixture. Taste and adjust seasoning.
