Spaghetti with Tomato and Herb Salsa

This uncooked pasta sauce is fresh and vibrant tasting. Preparation time: 1/2 hour

Ingredients:

  • 25ml olive oil
  • 1 clove garlic, pressed
  • 1/2 tsp. mineral salt
  • 1/2 tsp pepper
  • 2 Tbsp. apple cider vinegar
  • 1/2 ml cayenne powder
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh basil
  • 1/4 cup chopped fresh chives
  • 4 medium tomatoes (fresh, vine-ripened tomatoes are nice)
  • 1 lb/500g Kamut spaghetti (half a package)
  • Tofu (crumbled, add to sauce)

Directions:

  1. In a large serving bowl, combine olive oil with garlic, salt, pepper, vinegar, parsley, basil, chives and cayenne.
  2. Gently toss in tomatoes. Allow to marinate until ready to serve.
  3. Just before serving, cook spaghetti in large pot of boiling (salted) water until tender, 8 to 10 minutes (or according to the-instructions on the package).
  4. Drain well; toss with tomato mixture. Taste and adjust seasoning.
