Temptation Bread Pudding

Serves 2

Ingredients:

  • 1 large or 2 small red apples
  • 1 tablespoon lemon juice
  • 2 cups cubed whole grain bread
  • 2 tablespoons raisins
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup apple juice
  • 1 cup soy milk or oat milk
  • 2 tablespoons canola oil
  • 1/2 cup maple syrup
  • 1 free range egg, lightly beaten
  • 2 tablespoons pecans
  • 1 teaspoon maple syrup, extra

Directions:

  1. Preheat the oven to 340F and lightly grease two 1 cup ramekins or a small soufflé dish
  2. Grate the apples and sprinkle over the lemon juice
  3. In a mixing bowl, combine the grated apple, bread cubes, raisins and cinnamon
  4. In a separate bowl, whisk together the vanilla, apple juice, soy milk or oat milk, corn oil or safflower oil, 1/3 cup of maple syrup and egg. Pour this mixture over the bread and fruit mixture
  5. Pile the mixture into the prepared ramekins or soufflé dish. Toss the pecans in the extra maple syrup and sprinkle on top of the puddings
  6. Bake on the middle shelf of the oven for 25 minutes
  7. Serve warm with a scoop of pineapple ice cream or plain yogurt

Variations:

  • In place of apple, mango, pineapple, pear or peaches can be used
  • Walnuts or almonds can be used in place of pecans
