Hearty Chicken Chili

Ingredients:

  • 3 1/2 oz cooked lean ground chicken
  • 1 serving cooking oil spray
  • 1/3 cup chopped onion
  • 1/3 cup chopped raw sweet red pepper
  • 1/3 cup chopped raw green pepper
  • 1/3 cup diced celery
  • 1 tbsp chicken broth
  • 1 tbsp tomato paste
  • 1/2 clove garlic
  • 2/3 cup canned crushed tomatoes
  • 1/3 cup canned kidney beans
  • 1/2 tsp chili powder
  • 1/8 tsp ground black pepper

Directions:

Brown chicken in a non-stick pan. Drain fat and set chicken aside. Spray a non stick pot with cooking spray and heat on high. Saute onion for 3 minutes. Add peppers, celery and garlic and sauté for another 3 minutes. Add tomato paste and chicken broth. Mix ground chicken with sautéed vegetables and liquid. Add beans and chili powder. Simmer uncovered until chili reaches desired consistency and continue to cook for 30 minutes.
