Cranberry Wild Rice Bake

Ingredients:
- 1 cup uncooked organic wild rice
- 1-1/2 cup water
- 1 Tbsp olive oil
- 1 Med organic onion, finely chopped
- 1-1/2 cup organic chicken broth, heated
- 2 cloves organic garlic, minced
- 1 cup organic dried cranberries
- 1-2 Tbsp black pepper
Directions:
- Heat oven to 350F.
- Place rice in water and boil. Stirring occasionally. Reduce heat to low and simmer for 30 minutes. Drain.
- Cook onion and celery in olive oil, stirring occasionally until onion is tender.
- Mix onion, celery and rice in baking dish. Mix broth, garlic and pepper and pour over rice mixture.
- Cover and bake 75 minutes. Stir in cranberries and bake 15-20 minutes or until liquid is absorbed.
