Cranberry Wild Rice Bake
From Katrina Harrison and Carol Howden’s Ancient Wisdom in Modern Menu

Ingredients:

  • 1 cup uncooked organic wild rice
  • 1-1/2 cup water
  • 1 Tbsp olive oil
  • 1 Med organic onion, finely chopped
  • 1-1/2 cup organic chicken broth, heated
  • 2 cloves organic garlic, minced
  • 1 cup organic dried cranberries
  • 1-2 Tbsp black pepper

Directions:

  1. Heat oven to 350F.
  2. Place rice in water and boil.  Stirring occasionally.  Reduce heat to low and simmer for 30 minutes.  Drain.
  3. Cook onion and celery in olive oil, stirring occasionally until onion is tender.
  4. Mix onion, celery and rice in baking dish.  Mix broth, garlic and pepper and pour over rice mixture.
  5. Cover and bake 75 minutes.  Stir in cranberries and bake 15-20 minutes or until liquid is absorbed.
