Baked Sugar Snap Peas

Ingredients:

  • 1 pound sugar snap peas
  • 2 Tbsp olive oil
  • 2 Tbsp minced shallots
  • 2 tsp chopped fresh thyme
  • Salt

Directions:

  1. Preheat the oven to 450F. Mix peas and oil in a bowl until peas are coated, then turn onto a medium baking sheet in a single layer. Sprinkle them with the shallots, thyme and salt to taste. Bake 7 minutes until tender but still firm.
