Steamed and Roasted Asparagus

It is best to store asparagus in the refrigerator standing in a large mug or tall vase in an inch of water. This will keep the tips crisp and spears fresh. Lightly steaming asparagus for 4-5 minutes is the best way to preserve its rich nutrients and maintain its vibrant green color. Top with a little lemon juice and olive oil.

Roasting intensifies the flavor of asparagus. Drizzle thick spears with olive oil, sprinkle kosher salt over them, toss the spears until they are coated and roast in a 450 F oven for 5 minutes. At the end of 5 minutes, shake the skillet and turn the asparagus with a spatula. Roast for another 5 minutes. As they come out of the oven, squeeze the juice of half of a lime and serve.
