Summer Salad Dressings

Asian Dressing
(from Dr.Mercola’s Total Health Cookbook and Program)

Ingredients:

  • 3/4 cup tahini or almond butter
  • 3/4 cup black tea
  • 1 Tbsp apple juice
  • 1 small chili pepper or 1/4 tsp chili flakes
  • 2 cloves garlic, chopped
  • 2 Tbsp tamari (wheat-free soy sauce)
  • 2 Tbsp fresh ginger, minced

 Directions:

  1. Place nut butter, tea, apple juice, chili, tamari, garlic and ginger in blender. Cover and blend on high until smooth.
  2. Dilute to desired consistency. Store in covered container in refrigerator.

Basic Herb Vinaigrette
(from Dr.Mercola’s Total Health Cookbook and Program)

Ingredients:

  • 1/4 cup fresh lemon juice
  • 1/4 cup red wine or apple cider vinegar
  • 3 Tbsp olive oil
  • 3 medium garlic cloves
  • 3 Tbsp fresh parsley, basil or thyme leaves
  • 2 medium scallions or green onions
  • 1 Tbsp Dijon mustard
  • 1/2 tsp Mrs. Dash vegetable seasoning
  • 2 tsp apple juice
  • Variation: for a tomato vinaigrette, add 2 Tsp tomato paste

 Directions:

  1. Place all ingredients in blender. Cover an process on high until well blended or until smooth.
  2. Transfer to glass jar with lid. Refrigerate at least 1/2 hour before serving. Keep for several weeks.

Avocado Dressing
(from Paul Pitchford’s Healing with Whole Foods)

Ingredients:

  • 1 avocado
  • Juice of 1/2 lemon
  • 1/2 cup water or broth
  • 1/2 tsp dill
  • 1/4 tsp sea salt

Directions:

  1. Combine all ingredients and blend until smooth.

Basic Dressing
(from Sally Fallon’s Nourishing Traditions)

Ingredients:

  • 1 tsp Dijon mustard
  • 2 1/2 Tbsp raw wine vinegar or balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1 Tbsp flax oil

Directions:

  1. Put mustard into a small bowl. Add vinegar and mix.
  2. Add olive oil in a thin stream, stirring all the while with a fork, until oil is well mixed
  3. Add flax oil and use immediately.

Walnut Dressing
(from Sally Fallon’s Nourishing Traditions)

Ingredients:

  • 2 Tbsp sherry vinegar
  • 2 Tbsp unrefined walnut oil
  • 6 Tbsp extra virgin olive oil

 Directions:

  1. Place all ingredients in a bowl and stir well. Makes 1/2 cup

Cilantro Lime Dressing
(from Sally Fallon’s Nourishing Traditions)

Ingredients:

  • 1/2 cup extra virgin olive oil
  • 1 Tbsp flax oil
  • 3 Tbsp fresh lime juice
  • 1 Tbsp cilantro, finely chopped
  • 1/4 tsp dried oregano
  • Dash cayenne pepper
  • Pinch stevia powder

Directions:

  1. Combine all ingredients in a bowl and stir vigorously with a fork.

Caesar Dressing
(from Sally Fallon’s Nourishing Traditions)

Ingredients:

  • 1/2 to 1 tsp Dijon mustard
  • 1 Tbsp raw wine vinegar
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp finely grated parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 1 Tbsp flax oil
  • 1 egg yolk
  • 2 anchovy filets
  • 1 clove garlic, peeled and mashed

Directions:

  1. Place all ingredients in blender or food processor and blend until smooth.

Creamy Dressing

Ingredients:

  • 1/2 cup hemp oil, flax or olive oil
  • 1/4 cup lemon juice
  • 1 clove garlic, crushed
  • 1 tsp mustard powder
  • 1 tsp oregano
  • 1 tsp basil
  • 1-3 Tbsp plain organic yogurt
  • Sea salt and pepper to taste

Directions:

  1. Place all ingredients in a bowl and whisk together until well blended.
