Ginger Cookies
(makes 22 cookies)

Ingredients:

  • 1/4 cup canola oil
  • 1 cup applesauce
  • 1/2 cup molasses
  • 3/4 cup plus 1/4 cup turbinado sugar
  • 3 cups whole wheat pastry flour
  • 2 teaspoons ground ginger
  • 2 teaspoons allspice
  • 1 teaspoon cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Directions:

Preheat the oven to 350 degrees. Lightly oil a cookie sheet and set aside. In a large bowl, whisk together the oil, applesauce, molasses, and 3/4 cup sugar. In a separate bowl, whisk together the flour, ginger, allspice, cinnamon, baking soda, and salt. Add the dry mixture to the wet mixture. The dough will get thick, so use your hands wrapped in plastic bags to mix if necessary. Using a 1-ounce scoop or a tablespoon, place the dough 2 inches apart on the oiled cookie sheet. Sprinkle the remaining 1/4 cup of sugar evenly over the cookie dough. Bake for 10 to 12 minutes.
