Minestrone Soup
SERVES 6-8 PEOPLE, approx cooking time 1 hour
6-8 tablespoons olive oil heated up
ADD
- 1 1/2 cups chopped onions
- 1 1/2 cups carrots
- 1 1/2 cups celery
heat up until half cooked
ADD
- 1-28oz diced tomatoes
- 4-10oz of vegetable or chicken broth
- 4 cups of water
- 1 diced red pepper
- 2 small diced zucchini
- 1/2 teaspoon of basil
- 1 teaspoon oregano
- salt and pepper to taste
- 1-19oz red kidney beans
- 1-19oz chick peas
bring to boil, let simmer 15 minutes, add 1/2 cup small pasta of choice. Simmer until pasta is cooked approx: 15 minutes
