Minestrone Soup

SERVES 6-8 PEOPLE, approx cooking time 1 hour

6-8 tablespoons olive oil heated up

ADD

  • 1 1/2 cups chopped onions
  • 1 1/2 cups carrots
  • 1 1/2 cups celery

heat up until half cooked

ADD

  • 1-28oz diced tomatoes
  • 4-10oz of vegetable or chicken broth
  • 4 cups of water
  • 1 diced red pepper
  • 2 small diced zucchini
  • 1/2 teaspoon of basil
  • 1 teaspoon oregano
  • salt and pepper to taste
  • 1-19oz red kidney beans
  • 1-19oz chick peas

bring to boil, let simmer 15 minutes, add 1/2 cup small pasta of choice. Simmer until pasta is cooked approx: 15 minutes

Fresh basil, parmesan cheese
