Vegetable Hummus Wrap
Ingredients:
- 1 8 or 10 inch whole wheat tortilla
- 1 tablespoon Hummus (you can find this in the health-food sections of most grocery stores)
- 3 tablespoons grated carrot
- 3 tablespoons grated zucchini
- 1/4 cup sprouts
- 1 leaf red-leaf or romaine lettuce
Directions:
Spread the hummus in the middle and up to the edge of the tortilla; add the grated carrots, zucchini, sprouts and lettuce mix. Add any additional vegetable, grain, sauce or condiment you like. Roll up tightly into a 2 to 3 inch wide wrap.
Variation: Add chicken, turkey or tofu on top of the hummus and roll up as directed.
