Vegetarian Shepherd’s Pie

For a lighter option to use up turkey leftovers, this salad is a perfect choice. Fruits like apples and pears provide nutrients and plenty of fibre. Top this salad with nuts and seeds to add healthy fats and minerals.

Ingredients:

  • Onions
  • Garlic
  • Jar of Marinara Sauce
  • Salt
  • Pepper
  • 2 pkgs ground soy
  • Oil
  • Mashed potatoes
  • Frozen diced Vegetables (corn, carrots, beans, peas)

Directions:

In a little oil, cook onions, garlic, salt and pepper. Add soy; mix. It helps to crumble soy. Add defrosted vegetable mix, marinara sauce. Simmer a little bit.

Dump into a sprayed pyrex.

Top with mashed potatoes.

Cook at 400, 45 minutes.

Freezes well.
