Turkey, Pear & Apple Salad

For a lighter option to use up turkey leftovers, this salad is a perfect choice. Fruits like apples and pears provide nutrients and plenty of fibre. Top this salad with nuts and seeds to add healthy fats and minerals.

Ingredients:

  • 12 ounces diced turkey
  • 1 medium apple, cored and sliced
  • 1 medium pear, cored and chopped
  • 1 cup diced celery
  • 1/2 cup homemade cranberry sauce
  • 1/2 cup nonfat sour cream
  • 12 cups romaine lettuce

Directions:

In a large mixing bowl, combine the turkey, apple, pear and celery. In another small bowl, mix the cranberry sauce, sour cream and lettuce then add to the turkey mixture and toss. Top the romaine lettuce with the turkey salad and garnish with nuts and seeds.
