Wild Rice Salad

Ingredients:

  • 1 1/2 cups cooked wild rice
  • 1 cup cooked chickpeas
  • 1 cup tart apples, diced (organic if possible)
  • 1/2 cup celery, diced
  • 1 carrot, grated
  • 1/2 cup chopped walnuts
  • 3 Tbsp. balsamic vinegar
  • 2 Tbsp. unrefined olive oil
  • 1 fresh garlic clove, minced

Directions:

  1. Toss together wild rice, chickpeas, apples, vegetables and walnuts.
  2. In a small bowl, stir together the remaining ingredients.
  3. Pour the dressing over the salad and toss to combine.
  4. Sprinkle ground flax seeds over the top and enjoy!
