Wild Rice Salad
Ingredients:
- 1 1/2 cups cooked wild rice
- 1 cup cooked chickpeas
- 1 cup tart apples, diced (organic if possible)
- 1/2 cup celery, diced
- 1 carrot, grated
- 1/2 cup chopped walnuts
- 3 Tbsp. balsamic vinegar
- 2 Tbsp. unrefined olive oil
- 1 fresh garlic clove, minced
Directions:
- Toss together wild rice, chickpeas, apples, vegetables and walnuts.
- In a small bowl, stir together the remaining ingredients.
- Pour the dressing over the salad and toss to combine.
- Sprinkle ground flax seeds over the top and enjoy!
